Odisha Saga Bhaja Stir Fried Greens Mustard Oil

Method

    Wash greens thoroughly: Wash in multiple changes of cold water. Shake off excess water — but some water clinging to the leaves is fine, it will create steam during cooking.

    Heat mustard oil: Heat 2 tbsp mustard oil in a wide pan on high until smoking. Reduce to medium-high. Mustard oil is mandatory for saga bhaja — it provides the specific pungency.

    Add garlic: Add coarsely crushed garlic — stir for 30 seconds until it begins to colour.

    Add dried red chilli: Add dried red chilli. Let it darken 10 seconds.

    Add panch phoron (if using): Add a pinch of panch phoron — crackle 5 seconds.

    Add turmeric: Add turmeric. Stir 5 seconds.

    Add the greens: Add all the washed greens to the hot pan at once. They will wilt dramatically from the heat and steam from the water on their leaves.

    Stir on high heat: Stir vigorously for 2 to 3 minutes on high heat. The greens should wilt but retain a slight bite — they should not be cooked to mush.

    Add salt: Add salt. Stir once.

    Serve immediately: Saga bhaja must be served immediately — it continues to cook and wilt from its own heat if left to sit.

    Note: Saga Bhaja (saga = leafy greens, bhaja = stir-fried/fried in Odia) is the most basic daily preparation of the Odia diet — every Odia thali must include a saga. The greens eaten vary by season: spinach and fenugreek in winter, amaranth (lal saga) in summer, mustard greens in the cold months, and dozens of local wild leafy greens in the monsoon. The speed of cooking (under 5 minutes from start to finish once the greens are added) makes it the fastest preparation in Odia cooking.
