Method

    Heat 2 tbsp mustard oil to smoking. Reduce to medium.

    Add panch phoron — sizzle. Add dried red chilli.

    Add the prepared vegetables. Add turmeric. Toss to coat.

    Add the ground mustard paste. Stir well to coat the vegetables with the raw mustard.

    Fry on medium, stirring, for 3 to 4 minutes until the raw mustard smell transforms to a cooked pungent aroma — this step is essential.

    Add 1/2 cup water and strained tamarind water. Stir.

    Cover and cook on medium for 10 to 12 minutes until all vegetables are completely tender.

    Uncover. Cook 3 minutes to reduce the liquid slightly.

    Season with salt. The besara should be moderately dry with a pungent mustard and sour tamarind character.
