Mustard greens stir-fried dry with mustard oil and green chilli — the simplest, fastest daily vegetable preparation of the Meitei kitchen.
Wash mustard greens thoroughly. Roughly chop the leaves and tender stems.
Heat 1 tbsp mustard oil to smoking in a wide pan. Reduce to medium-high.
Add thinly sliced garlic — fry 1 minute until golden.
Add finely chopped green chillies. Stir 20 seconds.
Add all the mustard greens at once. Add turmeric.
The pan will look very full — the greens will reduce to about one-quarter volume.
Toss on high heat without covering for 5 to 6 minutes until all the greens are wilted and completely tender and any moisture has evaporated completely.
Do not cover — covering causes steaming which makes the greens watery.
Season with salt.
Serve immediately with steamed rice.
