Mustard greens stir-fried dry with mustard oil and green chilli — the simplest, fastest daily vegetable preparation of the Meitei kitchen.

Ingredients

Method

  1. Wash mustard greens thoroughly. Roughly chop the leaves and tender stems.
  2. Heat 1 tbsp mustard oil to smoking in a wide pan. Reduce to medium-high.
  3. Add thinly sliced garlic — fry 1 minute until golden.
  4. Add finely chopped green chillies. Stir 20 seconds.
  5. Add all the mustard greens at once. Add turmeric.
  6. The pan will look very full — the greens will reduce to about one-quarter volume.
  7. Toss on high heat without covering for 5 to 6 minutes until all the greens are wilted and completely tender and any moisture has evaporated completely.
  8. Do not cover — covering causes steaming which makes the greens watery.
  9. Season with salt.
  10. Serve immediately with steamed rice.
