Okra stir-fried dry with cumin, coriander and amchur — the everyday bhindi sabzi of Madhya Pradesh that relies on getting the bhindi crispy rather than slimy.
Wash okra and dry completely — spread on a tray for 30 minutes to air-dry or pat dry with kitchen towels.
Cutting wet okra causes sliminess. Cut into 1.5 cm rounds.
Heat 2 tbsp oil in a wide pan on medium-high.
Add cumin — sizzle. Add asafoetida.
Add finely chopped onion and green chillies. Cook on medium-high for 4 minutes.
Add the cut okra. Do not cover. Cook on medium-high stirring every 2 minutes for 10 to 12 minutes until the okra is cooked through and any sliminess has dried out completely.
Add turmeric, coriander powder and red chilli powder.
Toss well. Cook 2 more minutes.
Add amchur and salt. Toss.
Garnish with coriander. Serve with roti.
