Method

    Heat a non-stick pan on medium-low. Add crumbled khoya.

    Stir continuously for 5 to 6 minutes until the khoya warms through and becomes a smooth, soft, pliable mass. Remove from heat.

    Add powdered sugar while still hot. Mix thoroughly — the heat dissolves the sugar into the khoya.

    Add cardamom powder, saffron milk and chopped pistachios. Mix.

    Cool until handleable but still warm — the mixture firms as it cools.

    Divide into 16 portions. Roll each into a smooth ball between your palms.

    Roll each ball in desiccated coconut to coat.

  8. 8

    Refrigerate 30 minutes to firm. Serve at room temperature.
