Okra stir-fried dry with cumin, coriander and amchur — the everyday bhindi sabzi of Madhya Pradesh that relies on getting the bhindi crispy rather than slimy.

  1. Wash okra and dry completely — spread on a tray for 30 minutes to air-dry or pat dry with kitchen towels.
  2. Cutting wet okra causes sliminess. Cut into 1.5 cm rounds.
  3. Heat 2 tbsp oil in a wide pan on medium-high.
  4. Add cumin — sizzle. Add asafoetida.
  5. Add finely chopped onion and green chillies. Cook on medium-high for 4 minutes.
  6. Add the cut okra. Do not cover. Cook on medium-high stirring every 2 minutes for 10 to 12 minutes until the okra is cooked through and any sliminess has dried out completely.
  7. Add turmeric, coriander powder and red chilli powder.
  8. Toss well. Cook 2 more minutes.
  9. Add amchur and salt. Toss.
  10. Garnish with coriander. Serve with roti.
