Fresh coconut palm sap collected daily and allowed to ferment naturally into toddy — the traditional fermented drink of Goa and Kerala.
Fresh toddy method: toddy is consumed fresh — within a few hours of tapping it is sweet and mildly effervescent (neera).
By the next day it has fermented to a mildly alcoholic, slightly sour drink.
Serve fresh or at 1 to 2 days fermented.
Non-alcoholic substitute: combine fresh coconut water, lime juice, sugar and salt.
Stir until sugar dissolves. Add ice if desired.
This captures the subtle sweetness and mineral quality of fresh toddy (neera) without the fermented character.
