Fresh coconut palm sap collected daily and allowed to ferment naturally into toddy — the traditional fermented drink of Goa and Kerala.
Ingredients
1 litre fresh coconut toddy (collected daily from the inflorescence of coconut palms by licensed toddy tappers — available at licensed toddy shops in Goa; not available for home production without a palm tree)
For a non-alcoholic version that captures some of the flavour:
1 cup fresh coconut water
1 tsp lime juice
1/4 tsp sugar
A pinch of salt
Method
Fresh toddy method: toddy is consumed fresh — within a few hours of tapping it is sweet and mildly effervescent (neera).
By the next day it has fermented to a mildly alcoholic, slightly sour drink.
