Seasonal mountain greens boiled simply and dressed with dry-roasted sesame seeds and Naga chilli — the vegetable preparation of Nagaland.
Wash all greens thoroughly. Remove any tough stems. Roughly chop larger leaves.
Bring 2 cups water to a boil in a pot. Add crushed garlic and crumbled Naga chilli.
Add the greens. Cook on medium for 5 to 8 minutes until completely wilted and tender.
The Naga approach is to cook greens fully rather than leaving them al dente.
Drain. Reserve the cooking liquid for a simple broth.
Dry-roast sesame seeds in a dry pan on medium heat stirring for 3 minutes until golden. Crush lightly.
Toss the cooked greens with crushed roasted sesame seeds and salt.
Serve with sticky rice.
