Overnight fermented rice gruel — the traditional Naga morning drink consumed before the day's work in the fields.
Leave overnight at room temperature. By morning the water will have absorbed through the rice and the mixture will have fermented slightly — it will smell mildly sour and yeasty.
Place leftover cooked rice in a clay pot or bowl. Add 2 cups water and salt.
Stir thoroughly. The rice will have partly broken down into a thin gruel.
Consume as a drinking preparation — drink directly from a cup or bowl.
For a flavoured version: add 1 tbsp axone or a small piece of fermented bamboo to the overnight water and stir in before drinking.
Pour into glasses or cups. For hot drinks, warm the cup first by rinsing with hot water. For cold drinks, add ice just before serving. Serve immediately.
