Seasonal mountain greens boiled simply and dressed with dry-roasted sesame seeds and Naga chilli — the vegetable preparation of Nagaland.
Ingredients
- 400g mixed mountain greens — any combination of pumpkin leaves, colocasia leaves, water spinach, wild greens, mustard greens, bamboo shoot tips
- 2 tbsp sesame seeds — dry-roasted until golden
- 2 garlic cloves — crushed
- 1 dried Naga chilli — crumbled
- 1/2 tsp salt
Method
- Wash all greens thoroughly. Remove any tough stems. Roughly chop larger leaves.
- Bring 2 cups water to a boil in a pot. Add crushed garlic and crumbled Naga chilli.
- Add the greens. Cook on medium for 5 to 8 minutes until completely wilted and tender.
- The Naga approach is to cook greens fully rather than leaving them al dente.
- Drain. Reserve the cooking liquid for a simple broth.
- Dry-roast sesame seeds in a dry pan on medium heat stirring for 3 minutes until golden. Crush lightly.
- Toss the cooked greens with crushed roasted sesame seeds and salt.
- Serve with sticky rice.
