Maharashtra Solkadhi Kokum Coconut Digestive Pink Drink

Method

    Soak kokum in 1/2 cup warm water for 20 minutes until fully softened.

    Squeeze each kokum piece firmly to extract all the pink-purple sour juice.

  3. 3

    Strain. Discard the squeezed kokum pieces.

  4. 4

    In a bowl combine kokum extract, thick coconut milk, 1 cup cold water, pounded garlic, crushed roasted cumin, finely chopped green chilli and salt.

    Stir thoroughly until fully combined. The coconut milk will turn a beautiful pale pink from the kokum.

    Taste and adjust salt and sourness.

    Chill 20 minutes before serving.

    Stir well before pouring. Garnish with coriander.

    Serve cold.
