Soft milk-solid dumplings soaked in fragrant rose sugar syrup — India's most beloved sweet.
Precisely pleated steamed rice flour dumplings with fresh coconut-jaggery filling — the most sacred sweet of Ganesh Chaturthi requiring the highest technical skill.
Make filling: cook grated coconut and jaggery together on medium-low, stirring, for 6 to 8 minutes until jaggery melts and the mixture is well combined.
Add cardamom, poppy seeds and nutmeg. Cool. Divide into 16 portions.
Make dough: bring 2 cups water to a rolling boil with oil and salt.
Add rice flour all at once. Stir vigorously with a spatula until it comes together as a dough.
Remove from heat immediately. Knead with oiled hands while still hot until completely smooth and pliable. Keep covered with a damp cloth at all times.
Take a small ball of dough — keep the rest covered.
Place in oiled palm. Press thin with fingertips into a 7 to 8 cm cup shape with thin edges.
Place filling in centre. Using thumb and index finger, pleat the edges in 10 to 12 small folds pinching toward the centre. Pinch together at the top.
Steam 12 to 15 minutes. Brush with ghee.
