Kokum soaked and squeezed into fresh coconut milk with garlic, cumin and green chilli — the sour-cool digestive drink of coastal Maharashtra and Goa.

  1. Soak kokum in 1/2 cup warm water for 20 minutes until fully softened.
  2. Squeeze each kokum piece firmly to extract all the pink-purple sour juice.
  3. Strain. Discard the squeezed kokum pieces.
  4. In a bowl combine kokum extract, thick coconut milk, 1 cup cold water, pounded garlic, crushed roasted cumin, finely chopped green chilli and salt.
  5. Stir thoroughly until fully combined. The coconut milk will turn a beautiful pale pink from the kokum.
  6. Taste and adjust salt and sourness.
  7. Chill 20 minutes before serving.
  8. Stir well before pouring. Garnish with coriander.
  9. Serve cold.
