Method

  1. 1

Make tikkis: combine mashed potato with bread crumbs, cumin, red chilli powder, coriander and salt.

  2. 2

Mix well. Divide into 8 portions. Shape each into a flat patty 7 to 8 cm wide and 1.5 cm thick.

  3. 3

Heat 3 tbsp oil in a flat pan on medium. Shallow fry tikkis for 3 to 4 minutes per side until deep golden and crispy. Drain.

  4. 4

To assemble: place 2 hot tikkis in a bowl.

  5. 5

Spoon boiled chana around and over them. Pour whisked yogurt generously over everything.

  6. 6

Drizzle tamarind chutney and green coriander chutney.

  7. 7

Sprinkle sev generously on top. Add roasted cumin powder, red chilli powder and chaat masala.

  8. 8

Finish with pomegranate seeds and fresh coriander.

  9. 9

    Serve immediately.
