Crispy potato patties served on a bed of chana, curd, chutneys and sev — the Indore chaat that is among the most celebrated in central India.

  1. Make tikkis: combine mashed potato with bread crumbs, cumin, red chilli powder, coriander and salt.
  2. Mix well. Divide into 8 portions. Shape each into a flat patty 7 to 8 cm wide and 1.5 cm thick.
  3. Heat 3 tbsp oil in a flat pan on medium. Shallow fry tikkis for 3 to 4 minutes per side until deep golden and crispy. Drain.
  4. To assemble: place 2 hot tikkis in a bowl.
  5. Spoon boiled chana around and over them. Pour whisked yogurt generously over everything.
  6. Drizzle tamarind chutney and green coriander chutney.
  7. Sprinkle sev generously on top. Add roasted cumin powder, red chilli powder and chaat masala.
  8. Finish with pomegranate seeds and fresh coriander.
  9. Serve immediately.
