Dense khoya balls flavoured with cardamom and rolled in coconut — the simple Indore mithai that is among the most beloved traditional sweets of MP.

  1. Heat a non-stick pan on medium-low. Add crumbled khoya.
  2. Stir continuously for 5 to 6 minutes until the khoya warms through and becomes a smooth, soft, pliable mass. Remove from heat.
  3. Add powdered sugar while still hot. Mix thoroughly — the heat dissolves the sugar into the khoya.
  4. Add cardamom powder, saffron milk and chopped pistachios. Mix.
  5. Cool until handleable but still warm — the mixture firms as it cools.
  6. Divide into 16 portions. Roll each into a smooth ball between your palms.
  7. Roll each ball in desiccated coconut to coat.
  8. Refrigerate 30 minutes to firm. Serve at room temperature.
