Fried bread stuffed with a coarsely ground spiced urad dal filling — the Jabalpur and Sagar breakfast preparation also popular in Bhopal.
Make filling: combine coarsely ground urad dal with fennel seeds, red chilli powder, coriander powder, asafoetida and salt. Mix well.
Make dough: combine atta and salt. Add water and knead into a medium-soft dough. Cover. Rest 15 minutes.
Divide dough into 8 balls. Flatten each into a round 8 cm wide.
Place 2 tbsp filling in the centre. Bring edges up and seal completely.
Gently flatten the filled ball.
Roll out carefully to a round 10 to 11 cm wide — roll gently on a lightly floured surface.
Heat oil for deep frying on medium. Slide bedai puri into the oil.
Press lightly with a slotted spoon to encourage puffing.
Fry on medium for 2 minutes per side until golden and cooked through.
Drain. Serve hot with aloo sabzi and tamarind chutney.
