Fried bread stuffed with a coarsely ground spiced urad dal filling — the Jabalpur and Sagar breakfast preparation also popular in Bhopal.
Ingredients
- For dough:
- 2 cups whole wheat flour (atta)
- 1/2 tsp salt
- Water — to knead a medium-soft dough
- For filling:
- 3/4 cup split urad dal — soaked 3 hours, drained and coarsely ground
- 1/2 tsp fennel seeds
- 1/4 tsp red chilli powder
- 1/4 tsp coriander powder
- 1/4 tsp asafoetida
- Salt
- Oil for deep frying
Method
- Make filling: combine coarsely ground urad dal with fennel seeds, red chilli powder, coriander powder, asafoetida and salt. Mix well.
- Make dough: combine atta and salt. Add water and knead into a medium-soft dough. Cover. Rest 15 minutes.
- Divide dough into 8 balls. Flatten each into a round 8 cm wide.
- Place 2 tbsp filling in the centre. Bring edges up and seal completely.
- Gently flatten the filled ball.
- Roll out carefully to a round 10 to 11 cm wide — roll gently on a lightly floured surface.
- Heat oil for deep frying on medium. Slide bedai puri into the oil.
- Press lightly with a slotted spoon to encourage puffing.
- Fry on medium for 2 minutes per side until golden and cooked through.
- Drain. Serve hot with aloo sabzi and tamarind chutney.
