Method

    Boil potatoes until completely soft. Peel while still warm.

    Mash the warm potatoes coarsely — keep some texture.

    Jharkhand-style chokha is deliberately rough, not smooth.

    Add very finely chopped onion, green chillies and grated ginger. Mix.

    Add mustard oil and lemon juice. Mix well — the raw mustard oil provides a characteristic pungent note.

    Add black pepper, turmeric and salt. Mix. Add fresh coriander. Stir.
