Boiled potatoes roughly mashed with raw onion, green chilli, mustard oil and lemon — the essential accompaniment to dhuska and litti across Jharkhand.

  1. Boil potatoes until completely soft. Peel while still warm.
  2. Mash the warm potatoes coarsely — keep some texture.
  3. Jharkhand-style chokha is deliberately rough, not smooth.
  4. Add very finely chopped onion, green chillies and grated ginger. Mix.
  5. Add mustard oil and lemon juice. Mix well — the raw mustard oil provides a characteristic pungent note.
  6. Add black pepper, turmeric and salt. Mix. Add fresh coriander. Stir.
  7. Serve at room temperature alongside dhuska or litti.
