Method

    Cook the millet: Wash 2 cups whole finger millet thoroughly. Cook with 3 cups water in a pot on medium heat for 20 to 25 minutes until each grain is fully cooked and soft. Drain and spread on a flat surface to cool completely. The millet must be completely at room temperature before adding the fermentation starter.

    Add the fermentation starter: Sprinkle dry yeast over the cooled cooked millet. Mix gently with clean hands until the yeast is evenly distributed through every grain. Traditional tongba uses Marcha — a complex herbal yeast cake used across the eastern Himalayan belt that produces a more complex flavour than dry yeast.

    Transfer to a fermentation container: Place the yeast-mixed millet into a clean, dry container with a lid. Pack loosely — do not compress. The millet needs air pockets for fermentation.

    Ferment for 2 to 3 days: Cover the container loosely. Ferment at room temperature for 2 to 3 days. In warm weather, 2 days is sufficient. The millet will develop a pleasant yeasty-sour smell and may look slightly damp from fermentation moisture.

    Check fermentation: After 2 days, taste a tiny amount — it should be mildly sour, slightly sweet and beginning to taste faintly alcoholic. If not yet fermented enough, leave 1 more day.

    Fill the serving cup with fermented millet: Pack the fermented millet firmly into a bamboo cup or any heatproof cup — fill about 2/3 full.

    Pour hot water over the millet: Fill the cup to the top with freshly boiled very hot water. The hot water immediately begins extracting the fermented flavours and mild alcohol from the millet.

    Wait 2 to 3 minutes: Let the hot water and millet steep together for 2 to 3 minutes.

    Drink through a strainer or traditional straw: Use a bamboo straw with a blocked perforated tip (traditional) or a regular straw with a tea strainer over the cup. The straw filters the grain while allowing the liquid through.

    Refill with hot water 3 to 4 times: As the cup empties, keep refilling with fresh hot water. The same millet produces 3 to 4 servings — each refill is slightly less strong than the last.

    Note: Tongba is the traditional communal warming drink of the Limbu, Rai and Tamang communities of Sikkim, Darjeeling and Nepal — shared in a single vessel passed around the group. It is drunk during winter festivals, community gatherings and cold nights. The warmth comes both from the hot water and from the mild fermented alcohol. Tongba drinking is a social act — sharing the vessel and refilling multiple times is the tradition, not drinking alone.
