Soft milk-solid dumplings soaked in fragrant rose sugar syrup — India's most beloved sweet.
Thin crispy fried rice flour shells filled with a fresh coconut and jaggery filling — one of the most commonly made pithas (festival cakes) of Odisha, made for Raja Parba, Prathamastami and everyday temple offerings. The outer shell is rice flour, the inner filling is sweet, grated coconut.
Make the coconut filling: Heat grated coconut and jaggery in a pan on medium-low heat. Cook stirring for 8 to 10 minutes until the jaggery is fully absorbed and the mixture is dry and fragrant. Add cardamom. Cool. Divide into 16 portions.
Make the rice flour dough: Pour boiling water over the rice flour and salt. Mix immediately with a spoon. Allow to cool slightly, then knead with wet hands for 3 minutes to a smooth, pliable dough. Rice flour dough must always be worked with wet hands.
Divide into 16 balls.
Flatten each ball: Flatten into a thin disc in your palm using wet fingers.
Place filling: Place one portion of coconut filling in the centre.
Seal into a half-moon or round: Fold the rice flour disc over the filling and seal the edges by pressing firmly. Shape into a half-moon (traditional) or a round flattened shape.
Heat oil for deep frying: Heat oil on medium.
Fry the kakara pitha: Fry 4 to 5 at a time for 2 to 3 minutes until golden all over.
Drain on paper towels.
Serve warm or at room temperature.
Note: Kakara Pitha is one of the most universally made pithas (rice cakes) in Odisha — made for festivals but also sold daily at the sweet shops (mithai dukaan) near temples across the state. Unlike the more complex pithas that require specific techniques, kakara pitha can be made quickly and in large quantities. The combination of crispy rice flour outer with sweet coconut-jaggery filling is a preparation found in similar forms across the rice-producing coastal states — in Kerala (kozhukatta), in Maharashtra (modak) and in Tamil Nadu (kozhukatta) — but the Odia version has its own specific shape and frying method.
