Fermented millet beer — the sorghum or finger millet based fermented drink of the Naga hills made alongside rice beer for festivals.
Cook finger millet or sorghum until fully soft.
Spread on a tray and cool completely.
Mix the yeast starter with 2 tbsp cooled millet and a little water. Leave 15 minutes to activate.
In a clean clay pot combine cooled millet with activated starter.
Add 3 cups cool boiled water. Stir gently.
Cover with clean cloth. Ferment at room temperature for 2 to 4 days until pleasantly sour with a slight effervescence.
Strain for a clearer drink or drink unstrained with the grain solids.
Serve at room temperature.
