Pork stir-fried quickly with ginger, garlic, sesame seeds and black pepper — the everyday quick pork preparation of Khasi kitchens when time is short.
Dry-roast sesame seeds in a small pan 2 to 3 minutes until golden. Set aside.
Heat 1 tbsp oil in a wok or wide pan on high heat.
Oil should be very hot before adding pork.
Add sliced pork pieces in a single layer.
Do not stir for 90 seconds — let them sear and develop colour. Then toss and cook 2 more minutes.
Add sliced onion, ginger matchsticks and sliced garlic. Toss on high heat 2 minutes.
Add slit green chillies, turmeric and black pepper. Toss.
Add soy sauce. Toss everything quickly on high heat for 1 minute.
Taste and add salt only if needed — soy sauce provides saltiness.
Add dry-roasted sesame seeds and spring onion. Toss once.
Serve immediately over steamed rice.
