Pork stir-fried quickly with ginger, garlic, sesame seeds and black pepper — the everyday quick pork preparation of Khasi kitchens when time is short.
Ingredients
- 400g pork — thinly sliced (tenderloin or shoulder)
- 1 inch ginger — cut into thin matchsticks
- 4 garlic cloves — thinly sliced
- 1 tbsp sesame seeds — dry-roasted
- 1 small onion — sliced
- 2 green chillies — slit
- 1/2 tsp turmeric
- 1 tsp black pepper — coarsely crushed
- 1 tbsp mustard oil or any oil
- 1 tbsp soy sauce
- Salt to taste
- 2 spring onions — chopped
Method
- Dry-roast sesame seeds in a small pan 2 to 3 minutes until golden. Set aside.
- Heat 1 tbsp oil in a wok or wide pan on high heat.
- Oil should be very hot before adding pork.
- Add sliced pork pieces in a single layer.
- Do not stir for 90 seconds — let them sear and develop colour. Then toss and cook 2 more minutes.
- Add sliced onion, ginger matchsticks and sliced garlic. Toss on high heat 2 minutes.
- Add slit green chillies, turmeric and black pepper. Toss.
- Add soy sauce. Toss everything quickly on high heat for 1 minute.
- Taste and add salt only if needed — soy sauce provides saltiness.
- Add dry-roasted sesame seeds and spring onion. Toss once.
- Serve immediately over steamed rice.
