Method

    Wash the rice carefully: Place 2 cups rice in a wide bowl. Add water. Rub the rice gently between your palms — the water will turn cloudy. Pour off the water. Repeat 3 to 4 times until the water is almost clear. Proper washing removes excess surface starch for fluffier individual grains.

    Soak briefly: After washing, let the rice soak in fresh water for 15 minutes. Soaking hydrates the grains and reduces the cooking time slightly, producing more evenly cooked rice.

    Drain: Pour off the soaking water. Let the rice drain in the strainer for 2 minutes.

    Boil water first: In a heavy pot bring 3 cups water to a full rolling boil on high heat. Adding rice to already-boiling water rather than cold water produces a slightly different texture — more separate grains.

    Add rice to boiling water: Add the drained rice to the boiling water. Add a pinch of salt. Stir once.

    Return to boil: Let the rice return to a boil, stirring once.

    Reduce and cover: Reduce heat to the absolute lowest setting. Cover the pot tightly. Cook for 15 minutes without opening the lid.

    Check doneness: After 15 minutes, open the lid carefully. The rice should be fully cooked and all the water absorbed. If any water remains, cover and cook 3 more minutes. If the rice looks dry but is not yet cooked, add 2 tbsp water, cover and cook 3 more minutes.

    Rest covered: Turn off heat. Keep the lid on. Let rest for 5 minutes — the steam finishes cooking any remaining uncooked grains and makes the texture even throughout.

    Fluff and serve: Open the lid. Fluff the rice gently with a fork — a lifting motion from the bottom upward, never stirring. Serve immediately in deep bowls as the foundation of the Manipuri meal.
