Pav Bhaji
Mumbai's beloved mashed vegetable curry served on butter-toasted soft buns — street food gold.
Tomatoes charred over a flame then mashed with raw onion, roasted garlic, chilli and mustard oil — the third chokha of the classic Jharkhand trio.
Roast tomatoes directly over a gas flame using tongs, turning every minute, until the skin is completely charred and the tomatoes have collapsed — 6 to 8 minutes per tomato.
Roast garlic cloves directly over the flame briefly until golden spots appear.
Cool briefly. Peel charred skin from tomatoes. Peel garlic.
Mash the roasted tomato flesh coarsely. Add roasted garlic and mash together.
Add very finely chopped onion and green chillies. Mix.
Add mustard oil, black pepper and salt. Mix well.
Add fresh coriander. Stir. Serve at room temperature alongside litti.
