Method

    Use full-fat yogurt: In Haryana, the lassi is made from buffalo milk yogurt which is significantly thicker and higher in fat than cow milk yogurt. This gives the Haryanvi lassi its characteristic heaviness and creaminess. Use the thickest yogurt you can find — if the yogurt has a layer of cream on top, include that.

    Place yogurt in a deep vessel: Pour 2 cups thick yogurt into a deep container. A narrow, tall container churns better than a wide bowl.

    Churn the yogurt: Using a traditional wooden churner (madani) if available, churn by rolling the handle between your palms in alternating motions for 3 to 5 minutes until the yogurt becomes smooth, frothy and homogeneous. Alternatively use a hand blender for 1 minute or a regular blender for 30 seconds.

    Add cold water: Add 1 cup cold water to the churned yogurt. Churn or blend briefly for 30 seconds.

    Season: Add black salt, a pinch of regular salt and roasted cumin powder. These are the seasonings that distinguish Haryanvi lassi — it is savoury first, not sweet.

    Taste and adjust: Taste the lassi. It should be predominantly savoury with the complex flavour of black salt, the earthiness of cumin and the tanginess of the yogurt. Add more black salt if the flavour seems flat.

    Add ice: Add 4 to 6 ice cubes. Churn or blend briefly — just enough to chill, not to dilute excessively.

    Check the froth: A well-made lassi should have a layer of froth on the surface. This froth forms during churning and is a sign of good technique.

    Pour into tall glasses: Pour into tall steel glasses. In Haryana, lassi is traditionally served in large steel glasses or clay kulhads — not small cups.
