Tripura Chuwarak Rice Beer Tripuri Fermented

Lightly fermented rice beer made using a traditional starter cake — the ceremonial drink of the Tripuri people consumed during Ker festival, Garia Puja and other major tribal celebrations. Similar in character to the rice beers of other Northeast tribes.

Method

    Cook rice fully: Wash 2 cups raw rice and cook with 3 cups water until fully soft. Spread on a flat surface to cool completely to room temperature.

    Add yeast starter: Sprinkle dry yeast evenly over the completely cooled rice. Mix gently with clean hands.

    Primary fermentation — 2 to 3 days: Transfer to a clean container. Cover loosely. Ferment at room temperature 2 to 3 days until sour and yeasty smelling.

    Add cold water: After 2 to 3 days add 4 to 6 cups cold clean water. Stir gently.

    Secondary fermentation — 6 to 8 hours: Cover loosely. Leave 6 to 8 more hours. The mixture will become increasingly liquid and slightly fizzy.

    Strain through cloth: Pour through a clean muslin cloth, pressing the rice mass firmly to extract all liquid.

    Taste: The chuwarak should be mildly sour, slightly sweet, faintly alcoholic and slightly cloudy.

    Serve at room temperature: Traditionally served at room temperature in bamboo cups.

    Share communally during ceremonies: During Ker festival and Garia Puja, chuwarak is offered to the deity first, then shared among all participants.
