Method

  1. 1

    Heat a heavy pan. Add fine semolina. Dry-roast on medium-low stirring continuously for 8 to 10 minutes until the semolina is golden and smells nutty.

    Remove from heat. Cool 5 minutes until warm but handleable.

    Add powdered sugar, cardamom powder, saffron milk, fried cashews and raisins. Mix well.

    Add liquid ghee. Mix until the mixture comes together.

    Test: press a small amount between fingers — it should hold shape when pressed.

    If too dry add 1 tbsp more ghee. Shape into small balls while the mixture is still warm — it firms as it cools.

    Press firmly in the palm. Cool completely.

  8. 8

    Store in an airtight container for 2 weeks.
