Dry-roasted semolina bound with sugar, ghee and cardamom into sweet balls — the simplest and most widely made festival sweet of Telangana.

Method

  1. Heat a heavy pan. Add fine semolina. Dry-roast on medium-low stirring continuously for 8 to 10 minutes until the semolina is golden and smells nutty.
  2. Remove from heat. Cool 5 minutes until warm but handleable.
  3. Add powdered sugar, cardamom powder, saffron milk, fried cashews and raisins. Mix well.
  4. Add liquid ghee. Mix until the mixture comes together.
  5. Test: press a small amount between fingers — it should hold shape when pressed.
  6. If too dry add 1 tbsp more ghee. Shape into small balls while the mixture is still warm — it firms as it cools.
  7. Press firmly in the palm. Cool completely.
  8. Store in an airtight container for 2 weeks.
