Cooked rice mixed with fresh grated coconut, mustard seeds, dried red chilli and curry leaves in sesame oil — the temple offering rice of Telangana prepared for Vinayaka Chavithi and Shivaratri. The coconut is not cooked through but mixed raw into the warm rice, retaining freshness and texture.
Prepare rice: Ensure the cooked rice is completely cooled and the grains are separate. Warm or sticky rice makes the coconut annam clump.
Toss rice with 1 tsp sesame oil: Add 1 tsp sesame oil to the cooled rice. Toss gently to separate any stuck grains.
Make the tempering: Heat 2 tbsp sesame oil in a pan. Add mustard seeds — pop. Add urad dal and chana dal — stir until golden. Add curry leaves — crackle. Add dried red chilli and asafoetida.
Add turmeric: Add turmeric. Stir 5 seconds.
Pour tempering over rice: Pour the entire hot sesame oil tempering over the cooled rice. Toss immediately to coat all grains.
Add fresh coconut: Add the freshly grated coconut. The coconut is added raw — not cooked. Toss gently to distribute throughout the rice.
Add lemon juice: Add lemon juice. Toss.
Add salt: Add salt. Toss once more.
Add roasted cashews: Add the roasted cashews. Fold gently.
Serve at room temperature: Kobbari annam is not served hot — it is offered at room temperature as a temple prasad and eaten at the same temperature.
Note: Kobbari Annam (kobbari = coconut in Telugu, annam = rice) is the temple offering rice of Telangana — prepared for Vinayaka Chavithi (Ganesh Chaturthi), Shivaratri and Ugadi as a specific prasad offering. The use of raw fresh coconut (rather than cooking the coconut into the rice) is the defining technique — the fresh coconut retains its moisture and fragrance in the warm rice. Sesame oil is the specifically Telangana element that distinguishes kobbari annam from the South Indian coconut rice made with regular oil.
