Rajasthani Halwa Moong Dal Sweet Dessert

Split yellow moong dal roasted in ghee until very fragrant then cooked with sugar syrup and cardamom into a dense, smooth, fragrant fudge — the most significant festival sweet of Rajasthan. Made for Holi, Teej and wedding celebrations.

Method

    Soak the moong dal: Wash 1.5 cups split yellow moong dal in several changes of water. Soak in 3 cups water for 3 to 4 hours. Drain completely.

    Grind to a smooth paste: Grind the soaked, drained dal in a mixer to a very smooth, thick, slightly grainy paste. Add as little water as possible — about 3 to 4 tbsp. The paste should be dry enough to handle.

    Heat ghee in a heavy pan: Heat 1 cup ghee in a wide, heavy non-stick pan on medium-low. The generous ghee is essential — under-ghee-d moong dal halwa is dry and unpleasant.

    Roast the dal paste in ghee — the crucial long step: Add the ground moong dal paste to the hot ghee. Stir continuously on medium-low heat. The paste will first loosen in the ghee, then gradually dry and begin to separate into crumbly golden bits. Continue roasting and stirring for 25 to 30 minutes until the dal turns a deep golden-brown, smells intensely nutty and the ghee separates around it. Do not stop stirring.

    Make sugar syrup: While the dal roasts, make a light syrup by boiling 1 cup sugar with 1/2 cup water for 5 minutes until it reaches 1-string consistency.

    Add syrup to roasted dal: Once the dal is deeply golden and very fragrant, carefully pour the hot sugar syrup into the pan. Stand back — it will splutter dramatically. Stir immediately and continuously.

    Cook until halwa forms: Cook on medium heat stirring without stopping for 5 to 8 minutes. The halwa will absorb the syrup, thicken and begin pulling away from the sides of the pan.

    Add saffron and cardamom: Add saffron milk and cardamom. Stir.

    Add nuts and raisins: Add fried cashews and raisins. Stir.

    Serve warm: The halwa should be fragrant, dense and smooth — like a soft, glossy fudge. Serve in small portions as a festival sweet.

    Note: Moong Dal Halwa is the most important festival sweet of Rajasthan — made for Holi, Teej, weddings and all major celebrations. In the Marwari community, a wedding feast is considered incomplete without moong dal halwa. The long roasting of the dal in ghee for 25 to 30 minutes is non-negotiable — insufficiently roasted dal produces a grainy, raw-tasting halwa while properly roasted dal produces a smooth, nutty, deeply fragrant sweet.
