Flaky, layered pastry balls stuffed with a spiced onion filling — the Jodhpur kachori that is considered the finest of all Rajasthani kachoris.
Make filling: heat 2 tbsp oil. Add fennel seeds.
Add finely chopped onion. Cook on medium 8 minutes until soft and golden.
Add all spices. Cook 3 minutes until dry. Cool completely.
Make pastry: rub 4 tbsp ghee into maida until very crumbly.
The heavy ghee content creates the distinctive flaky texture.
Add salt. Knead with cold water into a firm dough. Rest 20 minutes.
Divide dough into 8 balls. Roll each into a 10 cm round.
Place 2 tbsp filling in centre. Bring edges up and seal completely.
Reshape into a smooth round ball.
Flatten slightly — the kachori should be thicker than samosa.
Fry on medium-low heat for 8 to 10 minutes turning regularly until golden and flaky all over.
The low-medium heat creates the flaky layered texture.
