Prawns cooked in a gently spiced coconut milk gravy — the coastal Odia prawn preparation influenced by the state's long coastline and coconut-growing tradition.
Marinate prawns with a pinch of turmeric and salt for 10 minutes.
Heat 2 tbsp oil in a pan. Add finely chopped onion.
Cook on medium for 7 minutes until golden.
Add ginger-garlic paste. Cook 2 minutes. Add turmeric, coriander powder and red chilli powder. Cook 2 minutes.
Add slit green chillies. Stir.
Add marinated prawns. Toss to coat with the masala.
Cook on medium-high for 2 minutes — the prawns will start turning pink.
Reduce to low. Add coconut milk. Add sugar and salt. Stir gently.
Simmer on low for 4 to 5 minutes until prawns are completely cooked through and the coconut milk has slightly thickened.
Do not overcook — prawns become rubbery quickly.
Garnish with fresh coriander.
