Prawns cooked in a gently spiced coconut milk gravy — the coastal Odia prawn preparation influenced by the state's long coastline and coconut-growing tradition.

  1. Marinate prawns with a pinch of turmeric and salt for 10 minutes.
  2. Heat 2 tbsp oil in a pan. Add finely chopped onion.
  3. Cook on medium for 7 minutes until golden.
  4. Add ginger-garlic paste. Cook 2 minutes. Add turmeric, coriander powder and red chilli powder. Cook 2 minutes.
  5. Add slit green chillies. Stir.
  6. Add marinated prawns. Toss to coat with the masala.
  7. Cook on medium-high for 2 minutes — the prawns will start turning pink.
  8. Reduce to low. Add coconut milk. Add sugar and salt. Stir gently.
  9. Simmer on low for 4 to 5 minutes until prawns are completely cooked through and the coconut milk has slightly thickened.
  10. Do not overcook — prawns become rubbery quickly.
  11. Garnish with fresh coriander.
