Maize cobs roasted over an open wood fire and seasoned with smoked salt and Naga chilli — the simplest and most universal Naga snack.
Roast the maize cobs directly over an open gas flame or charcoal fire.
Turn every 2 minutes — rotate to expose all sides.
The kernels should develop charred spots and the cob should smell smoky and toasty. Total roasting time: 10 to 12 minutes.
While still hot rub the roasted cob with a pinch of smoked salt and Naga chilli powder.
Rub with a little butter or oil if desired.
Serve immediately.
