Maize cobs roasted over an open wood fire and seasoned with smoked salt and Naga chilli — the simplest and most universal Naga snack.

Method

  1. Roast the maize cobs directly over an open gas flame or charcoal fire.
  2. Turn every 2 minutes — rotate to expose all sides.
  3. The kernels should develop charred spots and the cob should smell smoky and toasty. Total roasting time: 10 to 12 minutes.
  4. While still hot rub the roasted cob with a pinch of smoked salt and Naga chilli powder.
  5. Rub with a little butter or oil if desired.
  6. Serve immediately.
