Maize cobs roasted over an open wood fire and seasoned with smoked salt and Naga chilli — the simplest and most universal Naga snack.
Ingredients
- 2 fresh maize cobs — husks on or removed
- Smoked salt (available at specialty stores; substitute with regular sea salt mixed with 1/4 tsp smoked paprika)
- 1/4 tsp Naga chilli powder (or cayenne)
- 1/2 tsp butter or oil — optional
Method
- Roast the maize cobs directly over an open gas flame or charcoal fire.
- Turn every 2 minutes — rotate to expose all sides.
- The kernels should develop charred spots and the cob should smell smoky and toasty. Total roasting time: 10 to 12 minutes.
- While still hot rub the roasted cob with a pinch of smoked salt and Naga chilli powder.
- Rub with a little butter or oil if desired.
- Serve immediately.
