Strong ginger boiled with black tea and a touch of lemongrass — the warming daily drink of Mizoram consumed throughout the cool hill weather.
Bring 2 cups water to a full rolling boil.
Add grated ginger, bruised lemongrass if using and crushed black pepper.
Boil on medium heat for 3 to 4 minutes to extract the ginger and lemongrass flavour strongly.
Add black tea leaves. Steep 3 minutes on medium heat.
Strain through a fine strainer into cups, pressing the ginger firmly to extract all the flavour.
Add sugar or honey to taste. Add milk if desired.
Drink hot.
Pour into glasses or cups. For hot drinks, warm the cup first by rinsing with hot water. For cold drinks, add ice just before serving. Serve immediately.
