Prepare green beans: Wash 250g fresh green beans. String and cut into 1.5-inch pieces.
Make Karnataka coconut masala: Blend half cup fresh grated coconut, 3 dried red chillies, 1 tsp coriander seeds and half tsp cumin to a smooth paste.
Fry onion: Heat 2 tbsp oil. Add 1 finely chopped onion. Cook 8 minutes until golden.
Add ginger-garlic: Add 1 tbsp ginger-garlic paste. Fry 2 minutes.
Add tomatoes: Add 2 chopped tomatoes. Cook 6 minutes.
Add coconut masala: Add the ground paste. Fry 5 minutes.
Add spice powders: Add 1 tsp red chilli powder, 1 tsp coriander powder and half tsp turmeric. Fry 2 minutes.
Add beans and water: Add cut beans and 1 cup water. Add salt. Bring to a boil.
Simmer: Cover and cook on medium heat 12-15 minutes until beans are tender and gravy thickens.
Serve: Adjust salt. Beans curry Karnataka is flavourful with a coconut base. Serve with steamed rice or roti.
