Classic Karnataka — beans curry karnataka with French beans in coconut.
Ingredients
- - 400g French beans in coconut
- - 2 tbsp groundnut or coconut oil
- - 2 onions
- - 2 tomatoes
- - 1 tbsp ginger-garlic paste
- - 1 tsp red chilli powder
- - 1 tsp coriander powder
- - 1/4 tsp turmeric
- - 1 sprig curry leaves
- - Salt to taste
Method
- Prepare green beans: Wash 250g fresh green beans. String and cut into 1.5-inch pieces.
- Make Karnataka coconut masala: Blend half cup fresh grated coconut, 3 dried red chillies, 1 tsp coriander seeds and half tsp cumin to a smooth paste.
- Fry onion: Heat 2 tbsp oil. Add 1 finely chopped onion. Cook 8 minutes until golden.
- Add ginger-garlic: Add 1 tbsp ginger-garlic paste. Fry 2 minutes.
- Add tomatoes: Add 2 chopped tomatoes. Cook 6 minutes.
- Add coconut masala: Add the ground paste. Fry 5 minutes.
- Add spice powders: Add 1 tsp red chilli powder, 1 tsp coriander powder and half tsp turmeric. Fry 2 minutes.
- Add beans and water: Add cut beans and 1 cup water. Add salt. Bring to a boil.
- Simmer: Cover and cook on medium heat 12-15 minutes until beans are tender and gravy thickens.
- Serve: Adjust salt. Beans curry Karnataka is flavourful with a coconut base. Serve with steamed rice or roti.
