Method

    Prepare vegetables: Dice 1 potato, 1 carrot, 5 beans, half cup peas and half cup cauliflower into medium pieces.

    Make saagu masala: Grind 1 cup fresh grated coconut, 4 green chillies, 1 tbsp coriander seeds, 1 tsp cumin, 1 tsp fennel, 4 cloves, 2 cardamoms and 1 small cinnamon to a smooth paste.

    Cook vegetables: Pressure cook all vegetables with half cup water, salt and half tsp turmeric for 2 whistles. They should be cooked but not mushy.

    Fry onions: Heat 2 tbsp oil. Add 1 large finely chopped onion. Cook 8 minutes until golden.

    Add saagu masala: Add the ground saagu paste to the fried onion. Fry on medium heat 6-8 minutes until oil separates.

    Add cooked vegetables: Add the pressure-cooked vegetables with their water. Stir gently.

    Add water: Add half to 1 cup more water to adjust consistency. Bring to a boil.

    Simmer: Cook on medium heat 8 minutes.

    Add fresh coriander: Add a handful of fresh coriander. Stir.

    Serve: Adjust salt. Veg saagu should be thick, aromatic and well-spiced. Serve with dosa, puri or chapati.
