Method

    Boil yam until just tender. Peel and cube.

    Heat 2 tbsp oil in a wide pan. Add mustard seeds — pop.

    Add asafoetida and curry leaves.

    Add finely chopped onion. Cook on medium for 7 minutes until golden.

    Add boiled yam cubes. Toss to coat.

    Add turmeric, red chilli powder and coriander powder. Toss well.

    Cook on medium-high for 5 to 6 minutes tossing regularly until yam develops golden spots and the masala coats each piece.

    Add lemon juice and salt. Toss.

    Garnish with coriander.
