Make dosa batter: Soak 2 cups rice and half cup urad dal for 6 hours. Grind very smooth. Add salt and ferment overnight.
Add baking soda: Add a tiny pinch of baking soda to the batter and mix gently — this helps set dosa achieve its characteristic soft and spongy texture.
Check consistency: Set dosa batter should be slightly thicker than regular dosa batter. Add water if needed.
Heat tawa: Heat a small flat tawa on medium heat.
Oil the tawa: Drizzle half tsp oil and spread.
Pour thick batter: Pour a full ladle of batter — do not spread too thin. Set dosa is thick like a pancake.
Cover: Cover with a lid. This creates steam which makes the interior spongy.
Cook covered on medium-low: Cook 3-4 minutes until the top surface dries and looks set.
Check base: Lift a corner — base should be lightly golden. Set dosa remains pale golden, not dark.
Serve: Karnataka set dosa is served in a set of 3 dosas. Serve with coconut chutney, potato sagu and onion chutney.
