About Nimbu Pani: Nimbu Pani is Indian lemonade — simple, refreshing and perfectly balanced between sweet, sour and salty. It is the most popular summer drink in India and takes just 5 minutes to make. The addition of black salt, cumin and mint elevates it far beyond regular lemonade.
Make the base: Squeeze 4-5 large fresh limes or lemons into a pitcher. Remove any seeds. You need about 6-8 tbsp of fresh lime juice. Fresh juice is essential — bottled lime juice does not give the same bright, clean flavour.
Add sweetener: Add 3-4 tbsp sugar or honey. If using sugar stir with a small amount of warm water first to dissolve completely, then add to the lime juice. Undissolved sugar grains settle at the bottom. Alternatively make sugar syrup by boiling equal parts sugar and water until clear.
Add the secret ingredients: This is what makes Indian nimbu pani different from regular lemonade. Add half tsp black salt (kala namak — a sulphurous mineral salt available at Indian stores, it has a unique savoury depth), a pinch of regular salt, half tsp roasted cumin powder (dry roast cumin seeds and grind) and a pinch of chaat masala.
Add cold water: Pour in 3-4 cups cold water and stir well. Taste and adjust — add more lime for tartness, sugar for sweetness, black salt for depth.
Add mint: Tear or lightly muddle a handful of fresh mint leaves and add to the pitcher. Mint adds freshness and fragrance.
Chill: Add plenty of ice cubes or refrigerate for 30 minutes before serving for the best refreshing experience.
Variation — Masala Nimbu Pani: Add a thin slice of ginger and 2 green chillies slit to the pitcher along with the mint for a spicy version called Jaljeera-style nimbu pani.
Variation — Nimbu Soda: Replace cold water with chilled soda water or sparkling water for a fizzy version. Add soda just before serving.
Serve: Pour into tall glasses filled with ice. Garnish with a mint sprig, lime slice and a light dusting of chaat masala on top. Serve immediately and stir before drinking as the spices settle.
