Method

  1. 1

Clean pork intestines thoroughly: turn inside out and rinse under cold running water.

  2. 2

Rub generously with 1 tbsp salt and leave 5 minutes.

  3. 3

Rinse thoroughly. Repeat the salt rubbing and rinsing 3 to 4 times until the water runs completely clear.

  4. 4

Cut cleaned intestines into 4 to 5 cm lengths.

  5. 5

Place in a pot with 2 cups water. Bring to a boil.

  6. 6

Skim all foam from the surface.

  7. 7

Add crushed garlic, sliced ginger, whole green chillies and turmeric.

  8. 8

Reduce to medium. Simmer covered for 25 to 30 minutes until the intestines are completely tender and cooked through.

  9. 9

Season with salt. Garnish with spring onion and coriander. Serve with steamed rice.
