Pork intestines thoroughly cleaned and boiled with ginger, garlic and chilli — the Mizo whole-animal preparation that values every part of the pig.

Method

  1. Clean pork intestines thoroughly: turn inside out and rinse under cold running water.
  2. Rub generously with 1 tbsp salt and leave 5 minutes.
  3. Rinse thoroughly. Repeat the salt rubbing and rinsing 3 to 4 times until the water runs completely clear.
  4. Cut cleaned intestines into 4 to 5 cm lengths.
  5. Place in a pot with 2 cups water. Bring to a boil.
  6. Skim all foam from the surface.
  7. Add crushed garlic, sliced ginger, whole green chillies and turmeric.
  8. Reduce to medium. Simmer covered for 25 to 30 minutes until the intestines are completely tender and cooked through.
  9. Season with salt. Garnish with spring onion and coriander. Serve with steamed rice.
