Pork intestines thoroughly cleaned and boiled with ginger, garlic and chilli — the Mizo whole-animal preparation that values every part of the pig.
Ingredients
- 500g pork intestine — thoroughly cleaned
- 3 garlic cloves — crushed
- 1 tsp ginger — sliced
- 2 green chillies — whole
- 1/4 tsp turmeric
- 2 cups water
- Salt to taste
- Fresh spring onion and coriander to garnish
Method
- Clean pork intestines thoroughly: turn inside out and rinse under cold running water.
- Rub generously with 1 tbsp salt and leave 5 minutes.
- Rinse thoroughly. Repeat the salt rubbing and rinsing 3 to 4 times until the water runs completely clear.
- Cut cleaned intestines into 4 to 5 cm lengths.
- Place in a pot with 2 cups water. Bring to a boil.
- Skim all foam from the surface.
- Add crushed garlic, sliced ginger, whole green chillies and turmeric.
- Reduce to medium. Simmer covered for 25 to 30 minutes until the intestines are completely tender and cooked through.
- Season with salt. Garnish with spring onion and coriander. Serve with steamed rice.
