Classic Andhra/Telangana — raw mango toor dal.
Cook toor dal: Wash half cup toor dal. Pressure cook with 1.5 cups water and half tsp turmeric for 4 whistles. Mash partially.
Prepare raw mango: Peel 1 large raw mango. Grate the flesh coarsely — about 1 cup.
Add mango to dal: Add grated raw mango directly to the cooked toor dal. Mix well and cook on medium heat 5-6 minutes until mango softens.
Mash together: Mash gently to combine — some mango texture should remain.
Add spices: Add 1 tsp red chilli powder, half tsp coriander powder and salt.
Simmer: Cook on medium heat 5 minutes.
Make ghee tadka: Heat 2 tbsp ghee until very hot.
Add tadka: Add 1 tsp mustard seeds. When they pop add 3 dried red chillies, 4 garlic cloves sliced, a pinch of asafoetida and curry leaves. Fry until garlic is golden.
Pour tadka: Pour sizzling ghee tadka over the mango dal.
Serve: Adjust salt. Mango dal Andhra style is tangy and bright. Serve with steamed rice, ghee and papad.
